Acorn squash is also called pepper squash or Des Moines squash. It is considered a winter squash however is from the same family as summer squash. It is native to the Americas and thought to have originated in Mexico and Central America.  It is one of the more productive winter squashes and is most commonly dark green but can be found with other colored skin like white, orange and striped. It is frequently prepared by roasting and stuffing. It has a soft, sweet and nutty flavor when cooked.
